Heat olive oil in a large skillet or cast-iron pan over medium heat. Add diced onion and bell pepper and cook for 5โ6 minutes until softened.
Add minced garlic, cumin, paprika, and chili flakes. Cook for 1 minute, stirring constantly, until fragrant.
