Par-cook diced potatoes in microwave 3-4 min (or parboil) to speed things up.
Heat oil in a large skillet. Add potatoes in a single layer โ don't stir for 4-5 min to get crispy.
Add peppers and onion. Cook 4-5 min more.
Add garlic and spinach. Cook until wilted. Season with paprika, garlic powder, salt, pepper.
